Garlic langoustines, Capone Gourmet style
Langoustines are an exceptional delicacy that deserves simple preparation, highlighting their delicate, sweet flesh. This garlic recipe enhances their natural flavor with a touch of butter and lemon.
Ingredients (4 servings)
- 1 kg of fresh langoustines (12-20, 9-12 or 7-9 as you prefer)
- 4 cloves of garlic, finely chopped
- 80g of semi-salted butter
- 2 tablespoons of olive oil
- Juice of one lemon
- 1 tablespoon chopped fresh parsley
- Salt and pepper to taste
- Chili flakes (optional)
Preparation
- Preparing the langoustines : If they are whole, cut them in half lengthwise using a sharp knife. Remove the black vein if present.
- Heat the olive oil and butter in a large frying pan over medium heat.
- Add the garlic and sauté for 30 seconds until fragrant, without letting it brown.
- Sear the langoustines flesh-side down for about 1 minute, then turn them over shell-side down.

Cooking time depending on size :
- 12-20 : 3 to 4 minutes
- 9-12 : 4 to 5 minutes
- 7-9 : 5 to 6 minutes
- Drizzle with lemon juice , sprinkle with parsley and add salt, pepper and chili to taste.
- Serve immediately , accompanied by toasted bread or fragrant rice.
