Oscietra caviar comes from Russian sturgeon, a species native to the Caspian, Black and Azov seas. Medium in size, it can weigh 44 to 110 pounds (50 kg), providing a poppy and slightly nutty caviar with a coloration ranging from dark brown to beige. Many consider it to be the most refined caviar. Its eggs are large (between 2.7 and 3.2 mm). On average, it takes between 9 and 13 years to obtain this precious type of caviar.
