Beluga caviar comes from the Huso huso sturgeon, a fish that can reach a maximum length of 8 meters (26 feet) and a weight of over 1.5 tons (3,300 pounds). Native to the Black Sea, the Caspian Sea and the Sea of Azov, it was also found in the Adriatic Sea in Italy, the Ionian Sea and their tributaries before its extinction. This caviar is characterized by large eggs (over 3 mm), rather oval, and color tones from pearl gray to dark gray. Its quality is the rarest and most expensive. It must be tasted strictly by itself to truly appreciate and savor its incredible quality.
